Zucchini Weenies

This is my mom's recipe, veganized. These little weenies are like gold and they are the perfect hors d' oeuvres for any occasion. I can honestly say that I have never met ANYONE who didn't LOVE these things. I'm telling you, this is a sure way to make lots and lots of friends. I was sooo happy the first time I made these with vegan ingredients and discovered that they are just as yummy - maybe even yummier - than the original version! This was another dish that I shared with my neighbors and they were devoured.













Ingredients


1/2 cup Vegenaise
1/2 cup Parma
1/2 cup chopped fresh basil
2 zucchinis, sliced

1. Preheat oven to BROIL. Place zucchini slices on a cookie sheet.

2. Spread the basil mixture on each slice of zucchini. Place in the oven and cook for about 2-3 minutes or until golden brown. Keep an eye on these suckers because they cook fast!

I had a cast party to go to last night and it was sort of a potluck deal. I made these because zucchinis were on sale PLUS they looked super tasty. You're pretty much my new favorite! I popped them in the oven when I got there, just for a few minutes, and they were PERFECT. They were so tasty, they went fast! You're my hero. :)
